Soft Gingerbread Cookies
You know how chefs have signature dishes? This is my “signature cookie!”
These gingerbread cookies are so soft and tasty that your friends won’t know they are grain-free and packed with a prebiotic! In fact, my kids love these cookies so much that I have to hide them in the freezer or they will be devoured in one day! Ha!
I’ve provided 2 recipe options below. One option mimics a typical gingerbread cookie. I recommend choosing this first option when sharing these cookies with friends and family. The second option is a “medicinal cookie,” which contains less sugar and more healing nutrients.
Korean Beef and Carrots with Snap Peas
This dish is DELICIOUS and easy to make! Double the recipe and you can reserve half of the food for a hassle-free "frozen dinner" option. Simply store it in the freezer and easily reheat it in the oven for those hectic days when you're pressed for time or feeling overwhelmed.
Chewy Chocolate Chip Cookies (Grain-Free with AIP Option)
Every birthday, Christmas, and Father’s day, my kids and I make these cookies for my husband and he NEVER tires of them! Even though they are grain-free, they are delicious! My friends say they taste “just like regular cookies.” Score!
Creamy Mango Avocado Salad Dressing with Orange Zest
This salad dressing is perfect for summer! It is creamy yet light while adding healthy fats to my diet. The orange zest makes this dressing pop!

Mango Guacamole (Creamy or Chunky)
This guacamole is a family favorite! It’s nutrient dense, packed with flavor, and takes less then 10 minute to make!
I sometimes eat this guacamole by the spoonful. I also turn carrots or cucumber slices into “healthy chips” and use them as “guacamole delivery vehicles.” : )
