Vegetable Stuffed Pork Chops (Chicken Option)
I love this recipe because it’s quick to prepare yet I feel like a professional chef by stuffing the meat with a delicious combo of veggies and seasonings!
Plus, the recipe is versatile. Substitute the pork chops for chicken breasts or turkey. If you don’t like asparagus or your body doesn’t want it in that moment, substitute with a different vegetable that your body enjoys. Maybe green beans, broccoli or cauliflower.
Soft Gingerbread Cookies
You know how chefs have signature dishes? This is my “signature cookie!”
These gingerbread cookies are so soft and tasty that your friends won’t know they are grain-free and packed with a prebiotic! In fact, my kids love these cookies so much that I have to hide them in the freezer or they will be devoured in one day! Ha!
I’ve provided 2 recipe options below. One option mimics a typical gingerbread cookie. I recommend choosing this first option when sharing these cookies with friends and family. The second option is a “medicinal cookie,” which contains less sugar and more healing nutrients.
Butternut Squash and Red Pear Soup
I love making this soup on a cold, fall day when the leaves are changing colors. It smells delicious and is packed with healing nutrients. I often whip up a double batch and freeze the other half for a rainy day.

Mango Guacamole (Creamy or Chunky)
This guacamole is a family favorite! It’s nutrient dense, packed with flavor, and takes less then 10 minute to make!
I sometimes eat this guacamole by the spoonful. I also turn carrots or cucumber slices into “healthy chips” and use them as “guacamole delivery vehicles.” : )

My kids LOVE this recipe! Hands down, it is the most requested dish in our home. With only 10 minutes of prep work, you can create a delicious, nutrient packed meal with enough left over for breakfast the next morning!
I like to pair this recipe with my mango guacamole recipe and wild rice. My kids love to eat shredded pork in homemade tortilla shells.
As an added bonus, I have discovered that occasionally adding a bit of natural sugar into our meals has decreased sugar cravings in my kids, as well as myself!
